300g Darling Downs Chuck Tail Flap
2 servings of rice
Vinegar Mixture Ingredients: 1 tablespoon of sugar, a pinch of salt, 1 tablespoon of vinegar
Teriyaki Sauce Ingredients: 1 tablespoon of soy sauce, 1 tablespoon of mirin, 1 tablespoon of water, salt, one stalk of green onion
1/2 onion
1 stalk of scallion
Salt
Black pepper
Olive oil
Rosemary
Wasabi
Season the Chuck Tail Flap with salt, black pepper, olive oil, and rosemary for 10 minutes. Slice the onion thinly and soak it in water. Finely chop the scallion.
Heat a pan over medium heat, add olive oil.
Place the rested Chuck Tail Flap in the pan and cook it to medium-rare. Cook each side of the Chuck Tail Flap for 1 minute to get a crispy exterior.
Slice the Chuck Tail Flap to a thickness suitable for sushi.
Mix sugar and vinegar in a bowl in a 1:1 ratio. Add a pinch of salt, then stir to create the vinegar mixture.
Sprinkle the vinegar mixture over the rice and mix thoroughly to shape the rice into sushi form.
Place a small amount of wasabi on top of the rice. Add the sliced Chuck Tail Flap on top of the rice. Arrange the sliced onion and scallion on top in order as decoration.
In a separate bowl, mix soy sauce, mirin, water, salt, and sliced green onion to create the teriyaki sauce.
Drizzle the prepared teriyaki sauce over the sushi, and your dish is complete!
