300g Darling Downs Intercostals

1L beef stock
1 Carrot
1/2 Celery
1 sprig of rosemary
red cabbage 60g
white cabbage 60g
1 tbsp parsley
1 tbsp vinegar
1 tsp wasabi
Heat 3 tablespoons of olive oil in a large saucepan over medium heat.
Season the ribs with salt and pepper, then cook in a pan until golden brown, turning over.
Pour 1 liter of beef stock stock into a saucepan and simmer over low heat until the ribs are tender.
In a large bowl, combine the shredded cabbage, celery, red cabbage, carrots, rosemary, coarsely chopped parsley, and olive oil. Add vinegar and grated wasabi to taste and mix well to complete coleslaw.
Cut the buttermilk roll in half and fill it with the prepared meat and coleslaw to complete!
