Darling Downs Eye Round 500g
2 strips of bacon
1 carrot
2 stalks of celery
6 shiitake mushrooms
4 cloves of garlic
1 onion
Parsley powder
1 tablespoon of butter
1 cup of red wine
1/2 piece of liquid chicken stock 250mL of water
3 tablespoons of tomato paste
Salt
Pepper
2 bay leaves (optional)
Barbecue sauce
Use a kitchen towel to pat dry the moisture from the Wagyu, then cut it into large pieces. Season with salt and pepper.
Slice the garlic and shiitake mushrooms thinly, and dice the carrot, celery, onion, and bacon into large pieces.
In a pot, lightly sauté the bacon and transfer it to a plate. Add the sliced Wagyu to the same pot and cook it. Cook the Wagyu on high heat, searing the outer surface, then transfer it to the plate as well.
In the pot where the Wagyu was sautéed, add the onion, carrot, celery, shiitake mushrooms, and garlic, and sauté them. Once the vegetables are partially cooked, add the butter and let it melt.
After sautéing the vegetables, add the cooked Wagyu, tomato paste, red wine, barbecue sauce, chicken stock, and bay leaves to the pot, and bring it to a boil on high heat. Cover with a lid, and simmer on medium-low heat for about 1 hour, stirring occasionally.
Once done, neatly arrange the dish and sprinkle with parsley powder. Now it's ready to be enjoyed!
